Orecchiette with red prawns and Goji

Ingredienti:

440g of orecchiette, 16 fresh prawns, 1 garlic clove, 60ml of goji juice, 50g of fresh goji berries, olive oil, fresh oregano, goji sprouts, salt, 1/2 cup wine

Preparazione:

Clean the prawns, remembering to remove the digestive system (with a slight cut on the back) and cut them into small pieces. Put the orecchiette in plenty of boiling salted water. Meanwhile, brown a clove of garlic in a pan with extra virgin olive oil. Add the prawn heads and fry with a little wine and then mash them to release the juice. (in case they get too dry, add a little cooking water). Once you removed the heads, add the tails and the goji juice. Season them with salt. Drain the orecchiette al dente and put them in the pan with the sauce. Cut the fresh goji berries in half, add some goji buds and a few leaves of fresh oregano. Finish with a little olive oil. Enjoy!
