Light Pancake

150g of plain flour, 50g of sugar, 200g of water, 70g fresh goji berries, goji extra jam, 2 tablespoons extra virgin olive oil, 1 pinch of salt, 1 teaspoon baking powder.


Blend goji berries and pour them into a bowl with flour, yeast, sugar and salt. Gradually add water and oil continuing to mount the mix with a whip for a few minutes. Pour a little bit of oil in your frying pan and gently heat it. Pour three tablespoons of batter for each pancake. When bubbles appear, turn the pancakes and finish cooking. Finally, serve it with extra goji jam 100% natural and fresh berries. Enjoy!
